Morning Glory Muffins

Today's tasty Tuesday treat is the first of September's apple themed treats!  I decided to do something a little different and go with a breakfast treat.  I love muffins; I find them to be a fun way to mix up the ordinary breakfast menu!  I'm always up for a big chocolate chip muffin or a mini blueberry, doesn't matter I pretty much love them all.  When I found today's recipe I knew I had to try it out, plus, it doesn't seem too unhealthy which is nice!

Ingredients:
1 1/3 cup of whole wheat flour
1/2 cup of sugar
1/4 cup of packed brown sugar
1 1/2 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. salt
2 eggs
1/2 cup of plain greek yogurt
1 tsp. vanilla extract
1 apple, cored, peeled, and diced.  (I used some kind of red, the recipe called for fuji)
1/2 cup of seedless raisins (I used Craisins)
1/2 cup of grated carrots
1/2 cup of chopped pecans
1/4 cup of shredded coconut (recipe called for unsweetened, I only had sweetened)

There you have it, something sweet, and pretty healthy!  I hope you enjoy the first apple treat!  Next week's apple treat will be something a little less healthy.


Harper is starting to become interested in coloring...yay!!
